Coaching with Kerry: Hosting for the holidays without the stress

Christmas is over and New Years is right around the corner.

If you found yourself exhausted from hosting parties, WSBT 22's Life Coach Kerry Geocaris has tips on how to host holidays with less hassle and more happiness.

Kerry has some free recipes from her Cooking Coach Lori Fernandez:

Roasted Tomatoes and Olives

Ingredients:

2 Cups Assorted Grape Tomatoes

3 cups assorted Olives

2 Garlic Cloves minced

1/4 Cup Olive oil

1 Tablespoon Herb de Provence

Salt and pepper to taste

Place all ingredients in bowl making sure tomatoes and olives are coated with oil garlic and herbs. Roast at 425 for 15-20 minutes till Tomatoes start to burst. Serve on baguettes or crackers.


Sauted Mushrooms

Ingredients:

1# Assorted Mushrooms

2 T Clarified Butter

1 T Fresh Thyme, minced

2 Garlic Cloves Minced

Parmesan Cheese, shaved

salt and pepper

Procedure:

Clean and Slice mushrooms

Heat Clarified butter in hot large frying

pan.. Add mushrooms and sauté till

browned 5 minutes add thyme and

garlic, sauté one minute more.

Season with salt and pepper. Place on

top of crostini or cracker and garnish

with shaved Parmesan and fresh thyme.
